A cut is a direction, not a tap. The blade is the line your finger travels in a single frame, and when it crosses a fruit the two halves leave along the normal of that line -- so a fast diagonal throws them apart and a slow graze barely parts them. The score is a plain count of fruit, one each; the bombs cost ten, which is what stops the widest possible swipe from being the best one.
